We craft our wines in the time-honoured Burgundian fashion, using small vat fermentation with indigenous yeast. Hand plunging is carried out to achieve delicate extraction of colour and flavour from the skins, before at least 10 months maturation in French oak barriques. During this time it undergoes natural malolactic fermentation .Very low cropping levels result in a fruit driven, conentrated wine with the lovely velvety texture which makes this variety so famous.

We are very passionate about this variety. It is relatively new to Waipara, however it has shown itself to have immense potential. With little intervention our winemaking is entirely geared toward expressing the unique landscape in which the fruit it is grown. Fermentation is in small vats with indigenous yeast, and plunged by hand. The wine is then stored in French oak barriques for 10-18 months during which time it undergoes malolactic fermentation. Very low cropping levels with the warm days and cool nites produce a rich full bodied wine with velvety tannins and great finesse.

We, along with many others believe the Waipara Valley to be a very special place for riesling. The warm days and cool nights provide ripe, rich fruit while also retaining fresh citrus characters. Cool fermentation of optimally ripened grapes fills this wine with beautiful aromas of honey and lime while the palate is refreshing and crisp.

We aim to produce a rich aromatic wine with good complexity. Cropping levels are kept low to ensure the fruit is concentrated. Varietal flavours are accumulated through hang time on the vines well into Autumn. Fermentation is with native yeasts in aged oak barriques and the lees is stirred.
